Dairy Free Pizza Night

After the Easter festivities, Geff and I have been on somewhat of a heath kick. Trying to kick it back into high gear and prepare for the Bolder Boulder, Geff has committed to being dairy free with me! Tonight it was time to use the rest of Mom’s pizza dough and make some dairy free pizza!

We made two pizza options tonight:

Sweet Chili Sauce

JennyO Italian Turkey Sausage

Canned Artichoke Hearts

Chopped Green Onion

Garlic

Capers

Instructions:

We used the Sweet Chili Sauce as sauce for the pizza. Cooked the Italian Turkey Sausage in a pan before hand in slices. Chopped the artichoke hearts, garlic and green onion. We layered the sausage, followed by veggies and a handful of capers to finish. We cooked at 500º on a warmed cookie sheet with corn meal to prevent sticking. I don’t know how long we let it cook, but Geff waited until the pizza looked “crispy”.

Ali’s Tart Turkey Lemon Pizza

Canola Oil

Chili powder

1 large lemon

Basil

JennyO Italian Turkey Sausage

Canned Artichoke Hearts

Chopped Green Onion

Garlic

Capers

Instructions:

I took the lead on the Lemon Pizza. Since we had run out of olive oil, I made a sauce of the juice from the artichoke hearts, canola oil, lemon juice and chili powder. The sauce was just to taste and had a red appearance, probably a teaspoon of chili powder. The first layer was chopped green onions and basil to lightly cover the base of the pizza. The turkey sausage followed and was fully chopped for this pizza.  Then went the chopped artichokes, garlic and capers. The final touch was thinly sliced lemon rounds to top off the pizza. YUM!

So we had some more roughage,  a side salad of mixed greens, bean sprouts and pickled beets with a balsamic topping (NO OIL!). Geff’s comment after we were done was ‘I feel full, but not gross.’ Which is exactly what out goal was! And I won’t have a tummy ache or rash in an hour! It was a delicious win/win meal!

P.S. If you are not on a dairy free kick, throw some mozzarella, ricotta or Parmesan on the pizza to get your cheese fix.
