Here in the middle of the Mountain West we are lucky enough to be the only U.S. city hosting Yves Saint Laurent: The Retrospective, a fabulous exhibit of Yves Saint Laurent’s work at the Denver Art Museum. We went to see the exhibit today and I have to say, it was pretty awesome. With 200 garments on display and a number of additional sketches, photographs and additional historical works, the exhibit shows a very comprehensive selection of Monsieur Saint Laurent’s work. He pioneered a number of fashion breakthroughs including the pantsuit, the safari look and the jumpsuit. Getting his start at Dior, Saint Laurent learned from one of the premier ateliers of all time. After revolutionizing menswear for women, he managed to bring back the glamour of the 40s as well. His work celebrates women. If you are not familiar with his work or the brand as it is today, check it out. They make beautiful things. If, like me, you can’t necessarily shop in that price point, go and check out the cosmetics line. It is awesome with amazing colors (seriously, even the mascara smells good!). Yves Saint Laurent said, “A woman looks most beautiful when you can see her passion,” I think this was a beautiful tribute to HIS passion; the art of fashion.

What does March Madness mean to you? If you are me, (thanks to my dad and my tenure at an ACC school) it means all basketball all the time! It also means an opportunity to make sports food to keep all of our snacking needs in check. I actually first made these Chicken Wings for the Super Bowl this year and they were a huge hit! When I was buying wings, I picked up one bag and thought maybe two was a better plan, boy was that the right choice! They were gone in a hurry and I was pretty impressed with this especially for a first try. Like anyone, I love wings, but I don’t love the fried calories that comes with them. These are lightly smoked and then grilled and have so much flavor that I guarantee you won’t miss all the extra fat. For the smoking portion, I used Jack Daniels Wood Smoking Chips. Since I was a little short on time, this was a great option because they provided layers of flavor in one shot and were super easy even on our gas grill. I only smoked them for 25 min and then threw them back over the direct heat. I may try to smoke them a little longer next time, but they were great as is. We used Frank’s Red Hot BBQ Sauce this time because we had it on hand. Though I love the regular wing sauce, I think the BBQ is a little boring, so I threw a few extras in it (think a splash of Jack Daniels to go along with the wood chips and some Tabasco.) You really can use whatever sauce you like but this ended up not too spicy but lots of flavor. Grab some wings, wood chips and your bracket and get ready for the madness!

Kelly

Smokey Grilled Chicken Wings

3 Dozen Frozen Chicken Wings

1 Bag Jack Daniels Wood Smoking Chips

Aluminum Foil

Frank’s Red Hot Wing/BBQ Sauce

2 T Butter

Salt & Pepper

Wrap dry chips in foil, forming a cylinder shape leaving ends partially open. Place foil wrapped chips on heated lava rocks and turn on the burners leaving the other burners off. Allow the wood chips to heat in the closed grill until you can see smoke.

Place the frozen wings on the cool part of the grill away from the direct burners. Allow to cook for about 25 minutes and cooked through.

Prepare the sauce in a large bowl adding the butter. Remove the wings from the grill and season with salt and pepper then toss with the sauce in the bowl adjusting the amount of sauce as you like.

Turn on the rest of the burners on the grill to medium high. Place the wings back on the grill and cook for 3-5 min on each side until golden and charred.

Serve with blue cheese dressing and celery and carrot sticks. Enjoy!!

Here is a quick overview:

I am not a huge fan of sangria in general, because I like wine and prefer other sweet drinks. This one however is so fun! How can you go wrong with champagne? I will absolutely use this again, especially on a hot summer day…or for a bridal shower perhaps? I have to say, the favorite had to be the dates. They are rich and sweet and salty and a little spicy and just perfect. The gazpacho tastes like a garden in a glass. Such a great way to add a healthy element and would also be a wonderful first course, especially in the summer. Paella is something you can find a basic recipe for and add your own flare. Use the seafood and veggies you like and it will be lovely.

The one thing I do recommend is to use something as your focal point if you are looking to impress. We used a fan of asparagus and scallops in ours, but muscles or lobster on top create a lovely effect as well. The ice cream is like nothing else you have had. It has a wonderful texture and the nuts give it a toasty richness. With the ginger cookies (my staple), a few berries, and a sprinkling of toasted nuts, it was a lovely finish. I can’t wait to hear what you think!

Kelly

Citrus Champagne Sangria

Combine grapefruit juice, ginger ale, simple syrup (if you like sweetness) with thinly sliced blood oranges, tangerines, and apples overnight. Add half a glass of champagne or white wine to fancy glassware and top with the citrus mixture for fabulous presentation. Make sure some of the fruit makes it to the glass.

Gazpacho Shooters – Adapted from
Marge Cirinelli’s Twisted Gazpacho

2 cans (11.5 ounces each) tomato juice

Juice from 1 lemon

1 cup fennel, fine dice

1 cup cucumber (1 medium), seeded and peeled, fine dice

2 large carrots, fine dice

1/2 cup red onion (1 small), fine dice

1/2 cup celery (2 stalks), fine dice

1/2 orange bell pepper, fine dice

1 pint sweet 100 or other small cherry tomatoes, stemmed and quartered

2 tablespoons italian parsley, fine chop

3 tablespoons sherry vinegar

1 tablespoon olive oil

1 tablespoon garlic, minced

2-3 tablespoons jalapeño pepper, seeded, fine mince

1/2 cup dry white wine

salt and pepper to taste

splash of tequila

In a bowl, combine tomato juice, lemon juice, fennel, cucumber, red onion, celery, tomatoes, parsley, basil and sherry vinegar. Add olive oil to a small sauté pan along with minced garlic over medium heat, stirring until lightly browned. Add minced jalapeño and cook, stirring for 15 seconds. Add wine and cook until reduced by half. Stir mixture into the gazpacho and chill for 1-2 hours or overnight. Add a splash of tequila. Spoon mixture into shot glasses or small martini glasses.

Note: If you are serving them as shooters, you can use a hand held blender to smooth out the texture a bit, but if you use a fine enough dice, it will work anyway.

Chorizo-Filled Dates

Yield: Makes 12 dates

4 ounces fresh Mexican chorizo, coarsely crumbled

Salt and Pepper

1 tablespoon chopped Italian parsley

12 large Medjool dates

6 slices applewood-smoked bacon, cut crosswise in half

Cook chorizo in heavy small skillet over medium heat until browned and cooked through, stirring frequently and breaking up lumps with spoon, about 5 minutes. Drain off fat; transfer sausage to small bowl. Add parsley; stir to combine. Cool.

Working with one date at a time, cut slit along top of date. Gently pry open date and remove pit, leaving pocket. Stuff pocket with 1 scant tablespoon chorizo mixture. Wrap 1 bacon piece around each date, overlapping ends slightly; fasten ends with toothpick. Place wrapped dates on a baking sheet and place in a preheated 375° oven. Bake the dates for about 20 minutes or until bacon is brown. Remove toothpicks. Serve warm.

Note: I have also made these stuffed with a chunk of parmesan cheese in place of the chorizo and they were also amazing. A combination of the two might be gracing my next party.

Dulce de Leche Ice Cream – Gourmet, May 2007

Yield: Makes about 1 1/2 quarts

2 cups whole milk

1 cup heavy cream

1 pound dulce de leche (about 1 2/3 cups; preferably La Salamandra brand)

1/8 teaspoon pure vanilla extract

3/4 cup chopped pecans or walnuts (2 1/2 to 3 oz), toasted

Bring milk and cream just to a boil in a 3-quart heavy saucepan over moderate heat, then remove from heat and whisk in dulce de leche until dissolved. Whisk in vanilla and transfer to a metal bowl. Quick-chill by putting bowl in a larger bowl of ice and cold water and stirring occasionally until cold, 15 to 20 minutes. Freeze mixture in ice cream maker until almost firm, then fold in pecans. Transfer ice cream to an airtight container and put in freezer to harden, at least 1 hour.

Note: We found that it works best if all the ingredients are cold when you add them, so freeze the nuts for a while before adding them.

Ginger Cookies

Courtesy of ‘The SONO Baking Company Cookbook’ by John Barricelli

**Makes about 60 cookies

2 cups all-purpose flour

2 t. baking soda

¼ t. coarse salt

1 t. ground cinnamon

1 t. ground cloves

1 t. ground ginger

1 cup sugar, plus ¾ cup for rolling

¾ cup (1 ½ sticks) unsalted butter, at room temperature

1 large egg, at room temperature

¼ cup unsulfured molasses

In a large bowl, whisk together the flour, baking soda, salt, cinnamon, cloves, and ginger; set aside. In the bowl of a standing mixer fitted with the paddle attachment, beat together the sugar and butter on medium speed until light and fluffy, 2-3 minutes, scraping down the sides of the bowl halfway through. Beat in the egg and molasses until combined. Reduce the mixer speed to low and gradually add the flour mixture beating until combined. Transfer the dough to a clean bowl, cover with plastic wrap, and refrigerate until well chilled, about an hour (and up to 24 hours).

Arrange the oven rack in the middle position. Preheat the oven to 350°F. Line two baking sheets with parchment paper or nonstick silicone baking mats; set aside. Place the extra sugar for rolling on a plate; set aside. Use a 1 ½-inch ice cream scoop to scoop out the dough, and roll balls in the sugar to coat, and place about 2 inches apart on the prepared baking sheets. Bake one sheet at a time, rotating the sheet two-thirds of the way through the baking time, until the cookies are deep golden brown and the centers are firm, 15 to 20 minutes. Transfer the sheet to a wire rack to cool for 10 minutes. Use a spatula to transfer the cookies to the rack and let cool completely. Continue to roll and bake the remaining cookies in the same way.

Note: I like to keep these in the freezer. To do so, scoop into balls and roll in sugar then place on a baking sheet and cover with plastic wrap and freeze for several hours. Once the dough is frozen, place the dough in a freezer bag. Bake as usual using the frozen dough, no need to defrost. These will keep for several months in the freezer and are a great thing to have on hand for unexpected guests or late night cravings! Also, if you want to get really fancy make them into ice cream sandwiches…yum!

I enjoy the creativity and challenge of creating a beautiful event whether it is for 4 people or 400. This weekend I was privileged to assist with a Mediterranean themed dinner party. Since it was a great success, I thought I would share with you some of my favorite parts of the party and some ideas that may help you with your next party.

For those of you who entertain at home, this is my process. If you don’t, I will post some recipes this week, these are some good ones! (Please excuse my blurry low light cell phone photos as I, of course, forgot my camera. At least I didn’t forget anything important!)

Kelly

When planning a party menu, I generally start with an idea, dish, theme, color, etc as a jumping off point. In this case, we had decided on paella and Greek salad so we went with a Mediterranean theme.

I then think about the size of the party and the type of people attending. In this case, it was 10 people, and a fairly sophisticated crowd. This meant I could do some more labor intensive appetizers and be creative with my ingredients. I think it is important to have a variety of colors, tastes and textures within a menu. Even if people love meatballs, pigs in a blanket and chicken fingers, it makes for a very monochromatic spread with everything looking and tasting the same.

For an event like this, I wanted some healthy options since I knew we had some diet conscious people in attendance. I like to use recipes I have tried (in some form or fashion) before so I don’t have to worry about learning new techniques. In fact, we tried a few new recipes ahead of time and axed some and kept others.

Mediterranean Party Menu

Appetizers

Melon Balls with Prosciutto

Gazpacho Shooters

Chorizo Stuffed Dates

First Course

Greek Salad

Second Course

Paella

Bread

Dessert

Homemade Dulce de Leche Ice Cream

Ginger Cookies

Beverages

Spanish Wine

Citrus Champagne Sangria

Once the menu is decided, I compile all the recipes and evaluate what I already have. Then make my shopping list by both store and department. I can’t tell you how much of a difference it makes to have a list like this (then you don’t end up in dairy and realize the only thing you forgot is in produce!)

I also go through each recipe and estimate how much time it will take and what I can prep ahead of time. I create a timeline for the 3-5 days ahead of the party and plan when to shop and when to prep. Things will always end up slightly different than your plan, but if you have one, it is much easier to stay relaxed! It doesn’t have to be elaborate, just get an idea in your head. Now all you have to do is relax, have fun, and follow your plan!

There are some recipes like beef stew (or in our family, ground beef hash) that are comfort food staples. Just the smell brings back memories of home and family. There are others, like this stew, that are derivatives of those classics and may be (Gasp!) better than the original. This one came about when we started making Grandma’s traditional beef stew but found ourselves without all the ingredients. It became a game of saving the stew, and I think it came out amazing. It is both hearty and light at the same time and saves really well. In fact, I ate it for three days. The sweet potatoes helped to thicken it without any flour (a great option for those of you who are gluten free!) Let us know what you think!

Kelly & Mary

1 ¼ lb 85% Ground Beef

1 large onion

2 t Hungarian Sweet Paprika

Salt & Pepper

1 quart beef broth

2 T Ancho chili powder

1 t Guajillo chili

1 Yellow Pepper, chopped

½ cup petite frozen peas

2 sweet potatoes, chopped

1 pasilla negro chile

1 clove garlic

Brown the ground beef, making sure to break the beef up forming small crumbles.

When you have a good amount of liquid and fat coming out of the meat, use a paper towel to remove some of the fat. Add the chili powders, paprika and salt and pepper and continue to cook until browned. When the beef is browned, add the onion and cook until fragrant and translucent.

Add sweet potatoes. Pour in the beef broth and then add water to cover.

Bring to a boil and then reduce to simmer for about an hour. Meanwhile, toast the whole pasilla chile over an open flame (or a frying pan) until slightly toasted and fragrant, about 1-2 min. Break into pieces into a blender add 1 cup of water and 1 clove of garlic and blend about 30 seconds.

Strain puree into a pan and simmer until reduced by about half. Add to the stew along with the rest of the vegetables. (You don’t HAVE to do this step since it is a bit of a process, but I loved the smokiness and depth that this added.) Allow to simmer 15-20 more min to marry the flavors and allow the peppers to soften.

Top with a bit of goat cheese, Greek yogurt or sour cream and enjoy with a salad and tortillas or bread.

Yum Yum Yum.

Chili is always good, any time of the year but if you add 18″ of snow on the ground AND the Super Bowl, you have the perfect combination. This is such a great Super Bowl compliment because you can prepare it ahead and leave it simmering and let people enjoy it as they are ready. We like to lay out a variety of toppings and accompaniments and leave it to our guests. It is low key and always delicious. We tend to like our chili a little spicier than some people, so we might tone this down a little for company and leave some Tabasco out for adjustments. You could make up some cornbread to serve with the chili or go easy and stick to chips, saltines or tortillas. Now grab a bowl and enjoy the game (or the commercials)!

Mary & Kelly

Chili

Serves 6

1 ¼ Lbs 85% Lean Ground Beef

1 large can Hunts tomato sauce

1 large can Kuners chili beans

1 large onion, diced

3 cloves garlic, chopped

3 T Gebhardts chili powder

3 T Ancho chili powder

1-3 T Guajillo chili powder

1 t Oregano

Salt & Pepper

Brown the ground beef, making sure to break the beef up forming small crumbles.

When you have a good amount of liquid and fat coming out of the meat, use a paper towel to remove some of the fat.

Add the chili powder and salt and pepper and continue to cook until browned.

When the beef is browned, add the onion and garlic and cook until fragrant and translucent. Add the tomato sauce. Pour off some of the excess chili sauce from the beans, then add to the pot.

Allow to simmer for about an hour, adding water if necessary. Taste for seasonings and adjust as necessary. The color should be deep red.

If you are making this for children you can add 1-2 tablespoons of sugar as my grandma did. If the flavor is flat, add a little vinegar (red wine, sherry or apple cider are best). You can continue to simmer and add more water or seasoning as you like. You can always add some water if you like a thinner consistency or to stretch this if more people show up!

If you are like me (and many other women out there), you have come to love Pinterest. It is such a simple concept with so many possibilities. Pinterest has given me the ability to easy keep track of things I find online and discover lots of new ideas! This recipe came to me through this wonderful new community. Read the original blog post here. I made a few changes and I think I will make a few more next time I try this. Sweet potatoes are really good for you and super yummy too. Sometimes it is fun to put a twist on an old favorite; I thought these were awesome. I don’t really think you have to parboil them, so I would just start by roasting them instead. After being boiled, they got just a little too soft and squished a little too much (although that could just be me being overzealous.) I also added a bit more spice to balance out the sugar in this recipe since the potatoes are sweet on their own. This was amazing with some simple roast chicken, try it out! I will update you when I try these again.

Kelly

Crash Hot Sweet Potatoes

2 Medium Sweet Potatoes

½ teaspoon kosher salt

2 quarts water

1-2 tablespoons melted butter

1-2 tablespoons olive oil

Topping:

1 ½ tablespoons light brown sugar

½ teaspoon kosher salt

½ teaspoon ground cumin

½ teaspoon chili powder

½ teaspoon paprika

¼ teaspoon cayenne

¼ teaspoon onion powder

1 teaspoon Meat Magic

10 grinds black pepper – coarse

Peel the sweet potatoes and slice about 1 & ¼ inches thick.

Add ½ teaspoon salt to water in a saucepan and bring to a boil. Add potato slices and simmer for about 12 minutes, or until somewhat softened. Remove carefully to a wire rack and allow to cool for about 10 minutes.

Blend the topping ingredients together really well with a fork, making sure to get the sugar completely incorporated.

Line a large, heavy sheet pan with a silpat or parchment paper. Using a flat bottomed bowl, slightly mash each potato slice, taking care that they stay intact. Drizzle each slice with a mixture of the butter and oil and sprinkle evenly with ½ of the topping mixture. Make sure you avoid getting the topping on the sheet between the slices if possible – it will burn and smoke before the potatoes are done.

Gently turn over each slice, drizzle with the remaining butter/oil mixture and sprinkle with the remaining seasonings. (I didn’t think these needed that much fat. To keep it lighter, brush lightly with melted butter for the flavor or spray with cooking spray.) Roast at 375° for 20 minutes, carefully flip each slice and return to oven for about 10 minutes more.

Serve hot. YUMMY!!

It had never occurred to me to make shrimp cocktail at home. It is one of those things that you buy prepared for a quick and easy appetizer or meal that requires little to no prep. A sale on some shell-on shrimp and a request by Ali changed my mind. I was pleasantly surprised at how easy this was and the result was pretty great. This is really just like making one of my favorite things to make: stock. The shrimp ended up very tender and flavorful. This is one I may have to play with a little more and try out making cocktail sauce as well. We used the 365 brand sauce from Whole Foods. It was fine, I would give it a solid C, but there are better jarred options out there. One of the surprising parts of this recipe for me was the lovely stock created by draining the boiling liquid. That will be in the freezer ready for something fun soon! We served these with a lovely salad and some garlic toast. Overall, a satisfying and healthy meal!

Kelly

Shrimp Cocktail

10 cups cold water

1 large onion, halved

2 carrots, quartered

2 stalks of celery

1 head garlic, halved

1 lemon, halved

1/2 bunch parsley

5 sprigs fresh thyme

2 bay leaves

1 tablespoon kosher salt

Pinch of cayenne pepper

1 pound medium or large shrimp, in the shell, split & deveined, rinsed

Cocktail Sauce

Lemon wedges

Put the water, carrot, celery, onion, garlic, lemon, parsley, thyme, salt and bay leaves in a pot and bring to a boil over high heat.

(Ok, so we were missing a few veggies, so I spiced things up a bit with some dried herbs.) Lower the heat to a simmer, set a cover on top slightly ajar, and cook for 10 to 30 minutes until fragrant. Drop the shrimp into the liquid and turn off the heat after 10 seconds.

Cook the shrimp, stirring occasionally, until they curl and turn pink, about 2 to 2 1/2 minutes for medium shrimp, 3 minutes for large ones. Drain and cool to room temperature. Peel the shrimp leaving the tails on. Refrigerate if not serving right away.

To serve put the cocktail sauce in a medium bowl and surround with the shrimp, or loop the shrimp over the edge of an individual cocktail glass and top with the sauce. Garnish with the lemon and serve.

P.S. Those are my grandmother’s shrimp cocktail glasses, yep just for this dish. I love that the vintage glassware still gets used in the family!

Every year seems to have a cycle. We enjoy the holidays by indulging on some of our favorite foods, not to mention lots of party food. Then you get to good old January and feel the need to set yourself right again. I am trying to do that with more veggies and protein and less carbs and alcohol. This is a great salad to get you on the right track! I like to experiment with textures and colors to make salads more interesting. It makes salad feel like a gourmet meal and will leave you satisfied. I served salmon here, but you could use any kind of protein you like. I especially try to incorporate fish when I find a special; here in Colorado, fish can be expensive and is not always the best quality. Try this one out, the warm zucchini is a great compliment to the freshness of the salad! Do you have any ideas for going healthier this month?

Salmon with Zucchini Mixed Green Salad

4 Cups mixed green salad mix

3 Zucchini, thinly sliced lengthwise

2 Carrots, shredded

1 Tomato, cubed

½ Avocado, cubed

1 Can sliced hearts of palm

1 oz. Goat cheese, crumbled

¼ Cup Vinaigrette (3 parts olive oil, 1 part balsamic vinegar, 1 T Dijon mustard, 1 clove crushed and peeled garlic, salt and pepper)

1 lb. Salmon

1/3 Cup Marinade (4 T each citrus seasoning, orange juice and apple cider vinegar; 2 T each soy sauce and lime juice, olive oil)

Combine all the marinade ingredients in a shallow dish and add the fish. Allow to marinade 1 hour to overnight turning several times.

Preheat your broiler. Place the zucchini on a lightly greased sheet pan. Sprinkle with coarse salt and freshly ground pepper and lightly spray with cooking spray.

Broil for about 5-7 minutes until golden (although I like them well done.) Wash and dry the vegetables and combine in a large bowl. Add the hearts of palm and goat cheese.

Combine vinaigrette ingredients in an airtight container and shake well.

Place the fish under the broiler for about 15 min (keep a close eye on anything you broil as it can burn quickly.) Remove the garlic then toss the salad with the desired amount of salad dressing.

Top with the zucchini and fish.

Enjoy!
