Grown Up Grilled Cheese

What do you do after a long day when there is no food in the house? Last night was one of those nights for us. Ok so it wasn’t NO food clearly, but slim pickings: kind of like looking in your closet and having nothing to wear! Looking in the fridge, we had some spring pea soup that Mary had made but it wasn’t really jumping out as a meal. The only thing I could think to pair with it was grilled cheese of course! Who doesn’t love grilled cheese and some good soup? Given a few more staples we had lying around, this turned into an exceptional grilled cheese, if a little burnt since we were too hungry to wait patiently. Think cheddar and goat cheeses, onions and apple (yes, apple!) spiced up with a little thyme. Just the right combination to make boring cupboard staples into something great. Try it. It’s awesome. J



Grown Up Grilled Cheese

Shredded White Cheddar

Crumbled Goat Cheese

1 Onion Sliced

1 McIntosh Apple Julienned



Olive Oil

Whole Wheat Bread


Heat olive oil in a skillet and add onions to sautee. When onions are soft, add apples and season with a pinch of thyme and fresh ground pepper. Sautee until onions are lightly brown and apples are soft then remove from heat. Heat a skillet over medium heat (don’t do what I did and torch it.) J Lightly butter one side of bread. Place bread butter side down in pan. Sprinkle with cheddar, then apple and onion mixture, add some goat cheese, and finish with a bit more cheddar. Top with other slice of bread, butter side up. Turn once when golden brown on the bottom. Cook until desired doneness and serve immediately. Yummy!!

Dairy Free Pizza Night

After the easter festivities, Geff and I (Ali) have been on somewhat of a heath kick. Trying to kick it back into high gear and prepare for the Bolder Boulder, Geff has committed to being dairy free with me! Tonight it was time to use the rest of Mom’s pizza dough and make some dairy free pizza!

We made two pizza options tonight:

Sweet Chili Sauce

JennyO Italian Turkey Sausage

Canned Artichoke Hearts

Chopped Green Onion




We used the Sweet Chili Sauce as sauce for the pizza. Cooked the Italian Turkey Sausage in a pan before hand in slices. Chopped the artichoke hearts, garlic and green onion. We layered the sausage, followed by veggies and a handful of capers to finish. We cooked at 500º on a warmed cookie sheet with corn meal to prevent sticking. I don’t know how long we let it cook, but Geff waited until the pizza looked “crispy”.

I took the lead on the Lemon Pizza. Since we had run out of olive oil, I made a sauce of the juice from the artichoke hearts, canola oil, lemon juice and chili powder. The sauce was just to taste and had a red appearance, probably a teaspoon of chili powder. The first layer was chopped green onions and basil to lightly cover the base of the pizza. The turkey sausage followed and was fully chopped for this pizza.  Then went the chopped artichokes, garlic and capers. The final touch was thinly sliced lemon rounds to top off the pizza. YUM!

So we had some more roughage, we had a side salad of mixed greens from the grocery store, bean sprouts and pickled beets with a balsamic topping (NO OIL!). Geff’s comment after we were done was ‘I feel full, but not gross.’ Which is exactly what out goal was! And I won’t have a tummy ache or rash in an hour with the dairy free! It was a delicious win/win meal!

Easter Brunch

In our family, Easter not only includes our church celebrations, but also lots of friends, family and fabulous brunch.
